Campagnolo's Grilled BC Rockfish with Fennel and Fresh Herb Dressing

She first fell in love with cooking through her mother, who cooked exemplary home-cooked meals for her family. Jiwon’s passion for Italian cooking prompted her to start working at Campagnolo. Outside of work, Jiwon loves gardening and cleaning at her home.

Ingredients

  • 1 lemon
  • ¼ cup of oil
  • ¼ bulb of fennel
  • ¼ bunch of dill leaves
  • 2 cloves of garlic
  • 2 scallions
  • ¼ of a bunch of parsley
  • ¼ bunch of mint leaves
  • 1 tsp. of salt
  • 2 x 100g midwater trawl-caught BC canary rockfish fillets

Instructions

Herb Dressing

  1. Chop and mix ¼ bunch of dill leaves, ¼ bunch of parsley, 2 scallions, and ¼ bunch of mint into a small mixing bowl.
  2. Squeeze the juice from 1 lemon into the bowl, mixing in ¼ cup of olive oil and 1 tbsp. of salt.

BC Rockfish

  1. With a paper towel, brush a bit of olive oil on the rockfish.
  2. Grill on medium heat for 4 minutes on each side (or until golden brown).
  3. Once cooked, remove from heat and rest on a plate.

Assembly

  1. Chop ¼ fennel bulbs and place on a wide plate. Place the rockfish on top and finish by drizzling the herb dressing over the rockfish and plate.
